Ingredients
- 1-2 lb. pork tenderloin
- 2 peaches, cored and diced
- 1 fuji apple, peeled, cored and diced
- 1 jalapeno, seeded and finely diced
- 1/2 red bell pepper, seeded and diced
- 1/2 medium red onion, finely diced
- 1/3 cup fresh lime juice
- 1/3 cup cilantro, chopped
- 1 tbsp. honey
- 1/4 tsp. black pepper
- 1/2 tsp. of salt
- 1/4 cup brown sugar
- 2 tsp. chili powder
Instructions
Salsa & Pork Tenderloin Prep
- In a large mixing bowl, mix together peaches, apple, jalapeno, red bell pepper, red onion, lime juice, cilantro, and honey. Season to taste with salt and pepper. Refrigerate until ready to serve.
- In a mixing bowl, stir the brown sugar, 1/4 tsp. salt and the chili powder together. Coat all sides of pork tenderloin with brown sugar mixture.
Pork Grilling Instructions
- Preheat grill to medium-high heat.
- Place tenderloin over direct heat. Sear until brown on all sides and move tenderloin to indirect heat.
- Continue to grill for 10-15 minutes or until pork reaches an internal temperature of 140°F.
- Brush tenderloin with BBQ sauce and continue to cook for 5 minutes or until pork reaches an internal temp of 145°F.
- Remove from the grill and let rest for 10 minutes before slicing and serving.
- Plate and serve with Peach Apple Salsa. Enjoy!
Pork Oven Instructions
- Preheat the oven 400°F.
- Heat olive oil in a skillet on medium-high heat.
- Saute until brown on all sides.
- Place tenderloin in a baking dish, cover and bake for 15-20 minutes or until pork reaches an internal temperature of 140°F.
- Brush tenderloin with BBQ sauce and continue to cook for 5 minutes or until pork reaches an internal temp of 145°F.
- Remove from the oven and let rest for 10 minutes before slicing and serving.
- Plate and serve with Peach Apple Salsa. Enjoy!
