Ingredients

  • 1-2 lb. pork tenderloin
  • 2 peaches, cored and diced
  • 1 fuji apple, peeled, cored and diced
  • 1 jalapeno, seeded and finely diced
  • 1/2 red bell pepper, seeded and diced
  • 1/2 medium red onion, finely diced
  • 1/3 cup fresh lime juice
  • 1/3 cup cilantro, chopped
  • 1 tbsp. honey
  • 1/4 tsp. black pepper
  • 1/2 tsp. of salt
  • 1/4 cup brown sugar
  • 2 tsp. chili powder

Instructions

Salsa & Pork Tenderloin Prep

  1. In a large mixing bowl, mix together peaches, apple, jalapeno, red bell pepper, red onion, lime juice, cilantro, and honey. Season to taste with salt and pepper. Refrigerate until ready to serve. 
  2. In a mixing bowl, stir the brown sugar, 1/4 tsp. salt and the chili powder together. Coat all sides of pork tenderloin with brown sugar mixture.

Pork Grilling Instructions

  1. Preheat grill to medium-high heat.
  2. Place tenderloin over direct heat. Sear until brown on all sides and move tenderloin to indirect heat.
  3. Continue to grill for 10-15 minutes or until pork reaches an internal temperature of 140°F.
  4. Brush tenderloin with BBQ sauce and continue to cook for 5 minutes or until pork reaches an internal temp of 145°F.
  5. Remove from the grill and let rest for 10 minutes before slicing and serving.
  6. Plate and serve with Peach Apple Salsa. Enjoy!

Pork Oven Instructions

  1. Preheat the oven 400°F.
  2. Heat olive oil in a skillet on medium-high heat.
  3. Saute until brown on all sides.
  4. Place tenderloin in a baking dish, cover and bake for 15-20 minutes or until pork reaches an internal temperature of 140°F.
  5. Brush tenderloin with BBQ sauce and continue to cook for 5 minutes or until pork reaches an internal temp of 145°F.
  6. Remove from the oven and let rest for 10 minutes before slicing and serving.
  7. Plate and serve with Peach Apple Salsa. Enjoy!
