Rise and shine to this wonderfully delicious breakfast skillet. Kick the standard hash browns to the side and jump onto the tater tot train, with this hearty breakfast.

Ingredients
- 1 bag tater tots, frozen
- 8 slices apple-wood thick cut bacon
- 1 package breakfast sausage
- 2 tsp. chili powder
- 1/4 cup brown sugar
- 1/3 tsp. salt
- 1/3 tsp. black pepper
- 8 oz. cheddar cheese, shredded
- 3 green onions, diced
Instructions
- Preheat oven to 450°F.
- Spread tater tots out into a single layer on a baking sheet.
- In a small mixing bowl, stir the chili powder and brown sugar together. Season tater tots with 1/3 of the brown sugar mix.
- Place in the oven and cook tater tots for 20-25 minutes, or until golden brown.
- Pull tater tots from the oven and set aside.
- Lower oven temperature 375ºF.
- Line a large rimmed baking sheet with foil.
- Place a large cooling rack on foil lined baking sheet.
- Arrange bacon slices in a single layer on the baking rack and coat evenly with the remainder of the brown sugar mixture.
- Bake until bacon is crisp, about 20-25 minutes. Transfer to paper towels to drain excess grease.
- Place a skillet on the stove at medium high heat. Cook breakfast sausages for 12-16 minutes or until cooked through and browned. Remove from skillet and transfer to paper towels to drain excess grease.
- Add eggs to the same skillet. Do not remove the leftover grease from the sausages, as this will provide oil for the eggs.
- Season the tops of the eggs with salt and pepper.
- Cover skillet with a tight lid or foil. Let cook for 2-3 minutes, until the whites are fully set but the yolks are still runny or until the eggs are cooked to your liking.
- Drop oven temperature to 325ºF.
- Cut bacon and sausage into bite size pieces.
- In a separate skillet, layer tater tots, bacon, sausage, and cheese.
- Place in the oven for an additional 4-8 minutes, or until cheese is melted.
- Remove from the oven and place eggs on top.
- Garnish with green onions and serve warm. Enjoy!
