Ingredients

  • 1 bag tater tots, frozen
  • 8 slices apple-wood thick cut bacon
  • 1 package breakfast sausage
  • 2 tsp. chili powder
  • 1/4 cup brown sugar
  • 1/3 tsp. salt
  • 1/3 tsp. black pepper
  • 8 oz. cheddar cheese, shredded
  • 3 green onions, diced

Instructions

  1. Preheat oven to 450°F.
  2. Spread tater tots out into a single layer on a baking sheet.
  3. In a small mixing bowl, stir the chili powder and brown sugar together. Season tater tots with 1/3 of the brown sugar mix.
  4. Place in the oven and cook tater tots for 20-25 minutes, or until golden brown.
  5. Pull tater tots from the oven and set aside.
  6. Lower oven temperature 375ºF.
  7. Line a large rimmed baking sheet with foil.
  8. Place a large cooling rack on foil lined baking sheet.
  9. Arrange bacon slices in a single layer on the baking rack and coat evenly with the remainder of the brown sugar mixture.
  10. Bake until bacon is crisp, about 20-25 minutes. Transfer to paper towels to drain excess grease.
  11. Place a skillet on the stove at medium high heat. Cook breakfast sausages for 12-16 minutes or until cooked through and browned. Remove from skillet and transfer to paper towels to drain excess grease.
  12. Add eggs to the same skillet. Do not remove the leftover grease from the sausages, as this will provide oil for the eggs.
  13. Season the tops of the eggs with salt and pepper.
  14. Cover skillet with a tight lid or foil. Let cook for 2-3 minutes, until the whites are fully set but the yolks are still runny or until the eggs are cooked to your liking.
  15. Drop oven temperature to 325ºF.
  16. Cut bacon and sausage into bite size pieces.
  17. In a separate skillet, layer tater tots, bacon, sausage, and cheese.
  18. Place in the oven for an additional 4-8 minutes, or until cheese is melted.
  19. Remove from the oven and place eggs on top.
  20. Garnish with green onions and serve warm. Enjoy!
