Ingredients

  • 1 1/2 lbs ground beef (80% lean, 20% fat)
  • 1 large red onion, sliced
  • 12 oz. mushrooms, sliced
  • 1 head green leaf lettuce
  • 4 hamburger buns
  • 4 tbsp. unsalted butter
  • 2 tbsp. olive oil
  • 6 tbsp. light mayonnaise
  • 4 tbsp. BBQ Sauce
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1/4 tsp. dry rosemary

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add onion and cook for 5 minutes until soft.
  2. Add butter and mushrooms into skillet and continue to cook with onions for 12-15 minutes until mushrooms are soft and onions caramelized.
  3. Preheat the outdoor gas grill to high heat (450°F). If using a charcoal grill, arrange coals to one side of the grill to create direct (high) and indirect (low) cooking areas.
  4. Form beef into 4 patties, about 3/4” think and circular in shape. Using your thumb, place a small indentation in the center of patty.
  5. In a small mixing bowl, combine the salt, pepper, garlic powder, onion powder and rosemary, to make your prime rib rub.
  6. Coat patties evenly on both sides.
  7. Let patties sit at room temperature until ready to grill, about 20 minutes.
  8. Place patties on grill in a single layer and sear until brown and crispy on bottom, about 3-5 minutes.
  9. Flip and cook for 3 minutes.
  10. Move to indirect heat (charcoal) or turn down heat to medium heat (gas grill) and continue to cook for 1 minute.
  11. Place 2 slices of cheese on each patty, cover until cheese melts, about 1 minute.
  12. Toast buns on grill, about 1 minute.
  13. Remove patties and buns from the grill.
  14. Mix mayonnaise and BBQ Sauce and whisk together until blended, to make your BBQ aioli.
  15. Spread aioli mixture on bottom bun.
  16. Stack lettuce, patty, onion and mushrooms on bun.
  17. Finally, pour aioli mixture over burger, top with bun and serve.
