Burger time! We call these prime burgers because we’ve applied our rub that we tend to use on a prime rib. These things came out spectacular!

Ingredients
- 1 1/2 lbs ground beef (80% lean, 20% fat)
- 1 large red onion, sliced
- 12 oz. mushrooms, sliced
- 1 head green leaf lettuce
- 4 hamburger buns
- 4 tbsp. unsalted butter
- 2 tbsp. olive oil
- 6 tbsp. light mayonnaise
- 4 tbsp. BBQ Sauce
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/4 tsp. dry rosemary
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add onion and cook for 5 minutes until soft.
- Add butter and mushrooms into skillet and continue to cook with onions for 12-15 minutes until mushrooms are soft and onions caramelized.
- Preheat the outdoor gas grill to high heat (450°F). If using a charcoal grill, arrange coals to one side of the grill to create direct (high) and indirect (low) cooking areas.
- Form beef into 4 patties, about 3/4” think and circular in shape. Using your thumb, place a small indentation in the center of patty.
- In a small mixing bowl, combine the salt, pepper, garlic powder, onion powder and rosemary, to make your prime rib rub.
- Coat patties evenly on both sides.
- Let patties sit at room temperature until ready to grill, about 20 minutes.
- Place patties on grill in a single layer and sear until brown and crispy on bottom, about 3-5 minutes.
- Flip and cook for 3 minutes.
- Move to indirect heat (charcoal) or turn down heat to medium heat (gas grill) and continue to cook for 1 minute.
- Place 2 slices of cheese on each patty, cover until cheese melts, about 1 minute.
- Toast buns on grill, about 1 minute.
- Remove patties and buns from the grill.
- Mix mayonnaise and BBQ Sauce and whisk together until blended, to make your BBQ aioli.
- Spread aioli mixture on bottom bun.
- Stack lettuce, patty, onion and mushrooms on bun.
- Finally, pour aioli mixture over burger, top with bun and serve.
