Ingredients

  • 1 1/2 lbs. ground beef
  • 1/2 red onion, chopped
  • 2 garlic cloves, minced
  • 1 cup cheddar cheese, shredded
  • 2 cups monterey jack, shredded
  • 1 (15.5 oz.) can black beans, drained
  • 1 cup corn, drained
  • 2 cups cherry tomatoes, halved
  • 12 corn tortillas
  • 1 tbsp. olive oil
  • 1 pack of Kinder's The Taco Blend Seasoning (or 3 tbsp. homemade taco seasoning recipe)
  • 1 cup tortilla chips, crushed
  • 2 tbsp. cilantro, chopped finely for garnish
  • 2 tbsp. sour cream

Instructions

  1. Preheat the oven to 375°F.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add onion and cook for 5 minutes or until onions are translucent and tender. Stir in garlic, cook for 1 minute more. 
  4. Add ground beef to the skillet and cook until no longer pink for about 6-8 minutes. Drain fat.
  5. Stir in the taco seasoning, all but 1/4 cup of black beans, 1 1/2 cups cherry tomatoes, and corn. Mix thoroughly.
  6. In a cast iron skillet (casserole or baking dish will do)and spread out 4 tortillas on the bottom of the skillet. 
  7. Spread 1/3 of beef mixture over tortillas. Add a 1/3 of cheeses on top of beef mixture, then repeat with another layer of tortillas, beef, and cheese. Then top again with tortillas, beef mixture, and cheese. 
  8. Top with crushed tortilla chips, remaining beans and cheese. 
  9. Bake uncovered for 15-20 minutes or until the cheese is golden and bubbly. 
  10. Garnish with remaining tomatoes, green onion, and cilantro. Serve with sour cream and Enjoy!
